FHA Insider: Could you do a short introduction on yourself and your company?

Emmanuel: My name is Emmanuel Benardos, General Manager of Food and Beverage at Fairmont Singapore and Swissotel The Stamford including Raffles City Convention Centre. We are a complex with 2,030 rooms, 2 hotel brands, 13 restaurants and Bars as well as 10,000 sqm’s of function and event space.


FHA Insider: What/who are you looking forward to seeing at FHA-HoReCa? Or which sector most interests you?

Emmanuel: I am looking forward most to see the products that are promoting sustainability and reducing food waste as well as fine food and drink from around the world as well as innovative new food and beverage items new to market.


FHA Insider: What will you be highlighting about the industry at the Hospitality 4.0 sessions?

Emmanuel: The discussion will be centered around food technology that we are currently using on property, technology in the kitchen and how it interfaces to Front of House.


FHA Insider: What are your thoughts on the current landscape and what do you think is important for Foodservice and hospitality moving forward?

Emmanuel: Keeping and promoting great team members, efficiency/productivity and reduction of waste.


FHA Insider: Are there any peers you are looking forward to seeing at the show?

Emmanuel: Dave Pynt (Burnt Ends & Meatsmith) , Loh Lik Peng (Unlisted Collection), Dr. Martin Bem (LeVeL33), Julian Royer & Steve Mason (Odette & Claudine) and Andrew Ing (OUE Restaurants).

FHA Insider: What makes Fairmont Singapore & Swissotel The Stamford stand out from other hotels in terms of food and beverage?

Emmanuel: We have Singapore’s only Aquaponic’s Farm and we use the produce in our outlets.


FHA Insider: How do you maintain your standards amid the issues we face in the new normal environment?

Emmanuel: Observation on all parts of the business and seeing what competitors are doing helps. Communication is key and setting minimum standards of expectation then improving upon them.

FHA Insider: In your opinion has the hospitality industry recovered from the pandemic?

Emmanuel: I don’t think that we are back to full recovery but we are close!


FHA Insider: What’s next for Fairmont in terms of food and beverage?

Emmanuel: Getting back to full operations
